One of Steve’s favorite lunch meals is our One Pan Pizza Meat. It’s quick and easy to make, and best of all it’s all made in one pan! In a lot of keto forums and groups there are pages and pages written about the best keto-friendly crust substitute. Instead of substituting the crust, we decided to eliminate it all together and cook up just the toppings! We think you and even your non-keto friends and family will enjoy Pizza Meat!
Ingredients
- 4 oz pepperoni
- 6 oz of spicy sausage
- 1 tsp fennel
- 4 oz spinach (optional)
- Pizza sauce ingredients:
- 3 oz tomato paste
- 1/2 tsp Mediterranean oregano
- 1/2 tsp basil
- 1/2 tsp garlic salt
- 1/2 tsp onion powder
- 1/2 – 3/4 cup warm water
- 4-6 oz roughly shredded mozzarella cheese
Directions
In a small bowl, mix the pizza sauce ingredients (tomato paste, Mediterranean oregano, basil, garlic salt, onion powder, and warm water) until combined. Set aside.
In a skillet on medium to medium-high heat arrange pepperoni in a single layer. Fry until crispy, flip and repeat. Set aside. Do not drain the pan. In the same pan, break sausage into large crumbled pieces and brown. Set aside sausage in the same bowl as the pepperoni. In the same pan, wilt half the spinach, add the rest as space allows. Cook the spinach until it appears dry. Add the meats back to the pan and combine thoroughly. Add the sauce to the pan and mix until all ingredients are coated. Cover the ingredients with the cheese, cover and simmer 3 minutes or until the cheese is melted. Makes 4 servings.
