Ingredients

  • 1 lb. pork loin
  • 3/4 c. parmesan cheese
  • 1.5 oz. pork rinds
  • 2 eggs
  • 1/3 c. half and half

Directions

  1. Cut pork into consistent size pieces
  2. In a food processor break up pork rinds until the constancy of cornmeal.
  3. Mix in parmesan and seasoning as desired, (garlic and onion powder or seasoning salt of your choice) set aside.
  4. Combine eggs and half & half in a medium bowl.
  5. Dip pork in egg mixture and dredge in parmesan breading.
    1. Fry for 2-4 minutes in vegetable oil, flip when golden brown.
      (Or bake at 400 for 12-15 minutes).
