Ingredients
- 1 lb. pork loin
- 3/4 c. parmesan cheese
- 1.5 oz. pork rinds
- 2 eggs
- 1/3 c. half and half
Directions
- Cut pork into consistent size pieces
- In a food processor break up pork rinds until the constancy of cornmeal.
- Mix in parmesan and seasoning as desired, (garlic and onion powder or seasoning salt of your choice) set aside.
- Combine eggs and half & half in a medium bowl.
- Dip pork in egg mixture and dredge in parmesan breading.
- Fry for 2-4 minutes in vegetable oil, flip when golden brown.
(Or bake at 400 for 12-15 minutes).
