Ingredients:
- 1 lb of Feta
- 1 Egg
- 2 Egg yokes
- 1-3 T Parsley (Dry or fresh)
- Spinach leaves, enough to cover the bottoms of a 12 cupcake/muffin pan
- 2 T Butter, melted
You will need:
- Wisk
- Fork
- Mixing bowl
- Muffin/Cupcake pan
Directions:
- Pre-heat oven to 325 degrees F.
- Cut feta into crumbles (We recommend using block feta not crumbled)
- Combine egg, egg yokes and parsley
- Add half the cheese. Use a fork to to mash the cheese into the egg mixture.
- Add remaining cheese and continue to mash until no large pieces of cheese remain and the mixture is fully combined.
- Arrange spinach leaves in to cover the bottom of each cupcake/muffin pan compartment.
- Spoon the egg and cheese mixture into the pan.
- Drizzle butter over the egg and cheese mixture.
- Bake for 25 min. or until golden.
- Cool for 5 min. before removing from the pan.
Modifications:
- Use a hand or stand mixer instead of a fork to mash.
- Add 6-12 oz of cooked and drained spinach, transforming this into Spanakopita.
